How do I increase or decrease the capacity of my MeetingRoom? Can I modify the capacity while a meeting is in session?

Yes, you may modify your capacity while a meeting is in session. Log into your account and click on "Room Admin". On the next page, click on either "Add Capacity" or "Reduce Capacity" for the desired room. There will be a drop-down menu for you to choose your new total capacity.
